KEY LIME PIE COOKIE SANDWICHES

Good morning! Happy Wednesday:) This short week is flying by (thank goodness) and I’m just keeping my fingers crossed that this weather holds up so we can get a beach day in on Saturday. Since it was rainy most of last weekend, I stopped by Longo’s after church and picked up a few extra ingredients for dessert in addition to our usual staples. After eyeing this recipe on Pinterest for what felt like forever, I grabbed the cinnamon, graham crackers and key limes and got to baking. The graham cracker cookies came out so light and crumbly (but not falling apart at all), exactly like the crust of a key lime pie. The key lime filling was even easier to make and these delicious, bite sized sandwiches totally fulfilled my craving. 

Another check! on the summer baking bucket list. I used strawberries and oranges and still want to make desserts with cherries and peaches before fall gets here and it’s all apple and pumpkin recipes. I also promise to try and throw in a few healthy meal ideas, since my sweet tooth has been out of control lately, as evidenced by all of the dessert posts! ;)

  1. Oooh, I'm loving those close-ups! It's as if I can almost snatch those delicious cookies from the screen! Anyway, this recipe of yours sounds very easy to make, and will do great for an afternoon tea-party. I also love the key lime flavor, so I'm quite partial with your take on it.
