Sometimes I crave salad at weird times… like for breakfast this morning :) I got the most amazing cookbook from my sister-in-law for Christmas called the Gluten-Free Bible and the recipes are delicious! Inspired by one of their salads, this version has been added to the weekly rotation in our house. It doesn’t even need any traditional dressing – husband approved!
Spring greens, halved grapes, almond slices, fried goat cheese and a drizzle of honey is all you need.
To fry the goat cheese I dip the rounds in egg, bread crumb and put them on the stove in a little bit of oil for about a minute or two (they cook super fast). I’ve also added avocado to this in the past and if you really want dressing, balsamic would be perfect.
